A refrigerated container makes a capable food store, whether you hire one for a season or buy it outright. The moment you keep food for sale in it, though, hygiene rules apply — and across the UK and the rest of Europe those rules rest on HACCP. HACCP is not a certificate you purchase; it is a discipline. You identify where food safety could fail, control those points, and keep evidence that you did. In a cold store the critical point is almost always temperature, so most of the work comes down to monitoring it, recording it, and reacting when it drifts. ATP covers transport, not a static cold store

It is worth stating plainly because it catches people out. How long you retain records, how often you take a reading, and what counts as a critical limit differ by country and by product. Frozen goods held at around -18 °C and chilled produce at around +2 °C are judged against different limits, and national guidance sets the detail. Recording temperature: dataloggers and probes

Most reefers built in the last twenty years log their own temperature continuously, which hands you a ready-made record. For an audit trail many operators add an independent probe or datalogger as a second, traceable reading — useful if the machine’s own sensor is ever questioned. A manual log sheet, filled in at set times, still has its place on small sites and as a backup when electronics fail. Whatever you use, a dated trail that shows the store held its set point is the heart of a HACCP file.

Remote alarms: protecting stock you cannot watch

A datalogger proves the past; it does nothing for the present. That is the job of a remote alarm. A reefer holding frozen stock overnight can lose the entire load if the refrigeration plant trips and nobody notices until morning. An alarm that texts or emails you when the temperature drifts, or when the power fails, buys the hours you need to act. Whether one is a legal requirement depends on your product and your national rules; the practical case — protecting a store that may hold thousands of pounds of stock — rarely needs spelling out. A reefer also holds one set point at a time, so a single box runs either chilled or frozen, not both — if you need both, running two units beats compromising on either.

Cleaning and traceability

Two more HACCP basics round out the picture. Cleaning: a reefer’s aluminium floor and food-grade lining are made to be washed down, and a documented cleaning schedule is part of most hygiene regimes — so record it, do not just do it. Traceability: keep enough record of what went in, what came out, and when, that you could account for a batch in a recall. Neither is onerous for one store, but both are exactly the evidence an inspector may ask to see, and both are far easier to set up on day one than to reconstruct months later.

Choosing a unit that is easy to monitor

A unit that makes monitoring straightforward saves work every day it runs. On the hire side, long-term rates start at around £12 a day ex VAT, with minimum terms of about 90 days common, though some suppliers offer short-term hire at a higher day rate.
